My new best friend in the kitchen these days is the pressure cooker. I didn't know how to use it the first time, I even partially burned the beef I was cooking then. I didn't even like it because of the noise and it makes our ceiling yellowish from all the steam it releases BUT that was before, it's still noisy and our ceiling is still dirty, however, cooking with a pressure cooker is all worth whatever disadvantages it has.
My cooking has never been the same with it, even the simple nilaga has gone to another level, I boiled pork and beef altogether and was able to create a super yummy nilaga, with the meat so tender plus the tasty broth. We even enjoyed it for days. The pressure cooker also made it possible for me to cook crispy pata, boiling it in a regular pot even for hours will not make it as tender and crispy. Last night I cooked kare-kare using beef oxtail, I included some beef chunks and saved the broth for some beef mami probably over the weekend.
One more thing, I only need 30 minutes to cook with a pressure cooker and about 5-10 minutes to clean everything, except for the ceiling. I won't pressure myself to clean that!
