Butter Cupcakes & Pandan Butter Cake


My daughter kept bugging me for muffins the other day. She only stopped whining when I told her I'm going to make cupcakes instead. I used this butter cake recipe, well not really I guess. More like based it on this recipe substituting all purpose flour for cake flour and regular milk for the buttermilk. I was so pleased with the result, it tasted like Mamon (Filipino sponge cake) and it was even more delicious the day after. I actually made a second batch today and decided on incorporating a few drops of pandan essence. They're so green and delicious :D
